I hate making my lunch

WITH A FIERY PASSION! Okay, that’s a little dramatic, but I’m somewhat serious. I never know what I want, I’m always in the rush before work, so making something each and every day is a daunting task. I like for my lunches to be relatively healthy, (I say as I eat some kettle cooked himalayan sea salt potato chips), so meal prep is what works for me. As I’ve mentioned before, Sundays are usually so busy. Grocery shopping, trying to clean the house, prep for work for the week, walk the dogs, the list goes on. When I don’t meal prep on Sundays, every day before work is a struggle, so I’m trying to come up with creative ideas each week to keep me interested in my lunches and make it easy for me during the week.

This past Sunday, I prepped a cobb style salad for each day. I forgot to defrost chicken I had in the freezer, so I used what wouldn’t fit in my peppers when I made stuffed peppers. I distributed the ingredients evenly amongst five containers to use for the week!

-1 bag of frozen corn
-tub of cherry tomatoes
-organic spring mix
-a few slices of red onion
-10 hardboiled eggs
-blue cheese dressing (don’t pour it on until you are about to eat it)

I will say, this salad has kept me pretty full for a while after lunch. I’m impressed because I’m still pumping about six times a day, so I’m constantly hungry. What other meal prep ideas can I try? I’m always looking for new ones!
