
I have always been a snacker and being home full time now is no exception the the rule. I’ve definitely caught myself in the pantry on more than one occasion with a sweet tooth, so I thought I should make a snack to have on hand that is healthier than an oreo cookie.
These energy bites are quick and easy to make and you can really add in anything you like. I didn’t add dried fruit this time around because I knew the baby would want some and I wanted to use ingredients I know he has eaten before. I’m going to make more variations of this recipe in the future, so I’ll be sure to update!

Energy Bites
1. Measure out the peanut butter into a large bowl. Microwave for about 15-30 seconds, depending on your microwave. This makes the peanut butter easy to mix with the rest of the ingredients.
2. Measure all other ingredients into the same bowl. Mix!
3. Line a cookie sheet with foil or a silpat and roll the mixture into bite sized balls. Chill in the fridge for at least an hour and then store in an airtight container. Will keep in the fridge for 7-10 days.
